Curry Eggs
For hotter eggs use 3-teaspoons curry and no garam masala. For milder eggs use 1-teaspoon curry and 2-teaspoons garam masala.

Amount Ingredient Name Description
3 large eggs scrambled
2 teaspoons curry
1 teaspoon garam masala
1/2 medium yellow onion finely chopped
1/2 green poblano pepper finely chopped
2 cups cheese shredded
2 tablespoons olive oil

Steps

1. On medium heat, warm half your olive oil in a small frying pan.

2. Add onion & pepper and saute until tender.

3. Mix in garam marsala & curry; mix well.

4. Place mixture in a dish, add half your cheese, mix thoroughly and set aside.

5. In same pan add the rest of your oil and cook eggs to preference.

6. Fold together eggs & mixture, adding the remaining cheese.
